Carnivale announces David Dworshak as the new Executive Chef at Jerry Kleiner’s iconic Latino/Global Cuisine restaurant. Dworshak has served as the Executive Sous Chef at the celebrated West Loop establishment since its inception six years ago. Current Executive Chef, Mark Mendez, is leaving Carnivale to pursue his dream of opening his own restaurant but will be working alongside Chef Dworshak throughout the transition until September 1.
When asked about Dworshak taking on the new role, Chef Mendez stated, “David and I have worked together for more than eight years and I am confident knowing he will be taking the reins as Executive Chef at Carnivale. Without a doubt he is the best Executive Sous Chef I could have asked for and he has gone above and beyond my expectations. My departure will allow him to receive the exposure and credit he deserves. The people at Carnivale have become like family to me and there is no one I would rather see as Executive Chef, than David. David’s work ethic, culinary talents and curiosity have inspired me daily. I will truly miss working side by side with him and I leave knowing that David will take Carnivale to the next level.”
Before coming to Carnivale, Chef Dworshak has worked with an array of well-known Chicago Chefs throughout his career including: Chef Shawn McClain at Spring, Chef Allen Sternweiler at Harvest on Huron and Chef Stephanie Izard at Scylla Restaurant. David plans to bring the menu at Carnivale to the next level with his own creative interpretations of the flavors of Latin American food. Chef Dworshak added, “I am eager to bring a fresh perspective to one of Chicago’s most popular dining destinations and incorporate more diversity in the menu over time. I will continue Chef Mendez’s love for food, passion and creativity.”
