Quartino introduces the ultimate in aged rice – Acquerello Riso – imported directly from Piedmonte, Italy. Acquerello rice is grown, aged, whitened and packed in Italy on the Colombara farm by the Rondolino family. The unhusked rough rice is aged to perfection for at least one year, then is whitened slowly using an exclusive method, and finally re-enriched with its most nutritional element the embryo or germ, making it the best choice for classic Italian risotti.
Chef John Coletta has created a number of dishes to highlight the imported rice including Shrimp Risotto with zucchini and sun-dried tomato ($12.25), Tuscan Sausage Risotto with oven-roasted cherry tomatoes and fresh peas ($11.75), Mushroom Risotto with roasted Portobello mushrooms, mushroom purée and pork stock ($11.00), Asparagus Risotto with fresh asparagus and asparagus purée ($11.50), and Saffrom Risotto ($12.50).
