Quartino, in partnership with Isola Imports, celebrates the region of Alto Adige, Italy this November with an exciting menu of regional specialties available all month long. Specials include cheeses from the region, Dolomiten Konig and Stelvio, White Asparagus Salad with Egg-Horseradish Salsa, and Organic Veal filets with Braised Savoy Cabbage and Speck from Alto Adige. Specially selected wines from the region are also available for $20 per bottle. Complete menu is below.
Alto Adige is located in the Italian Alps between Verona and Innsbruck and is one of the most innovative regions in Italy. The Alpine and Mediterranean diversity manifested in Alto Adige’s cuisine leaves little to be desired. Traditional Alpine fare appears on menus alongside Italian classics like pizza and pasta.
Speck dell’Alto Adige is one of the best-known foods from the region. It is a pork preserved through gentle smoking, followed by the crunchy Schüttelbrot, so-called because it is shaken flat. Other specialties of the region include the tasty Stelvio and Dolomiten König cheeses. Stelvio is a cow’s milk cheese from the Stelvio Valley in Alto Adige that has been made in the region for hundreds of years, while Dolomiten König is is a noble, soft-textured cheese characterized by full flavor and unmistakable holey texture; it is aged for two months.
