On Sunday, December 5 from 5:00 PM – 8:00 PM at Red Light Restaurant, Howard Davis and Jerry Kleiner will host a memorial fundraiser for the family of the late Chef Paul Wildermuth, who passed away suddenly on November 13. Paul Wildermuth, 46, was a celebrated chef who specialized in contemporary Asian cuisine as well as French bistro cuisine. He was formerly was executive chef at the KDK restaurants Opera, Red Light , Marche and Saiko.
Event will feature some of Chef Paul’s famed dishes he created during his time as Executive Chef at Red Light including Asian 5 Spiced Ribs, Pork Dumplings with Hoisin Cognac Sauce and Spicy Peanut Noodle Salad. Suggested minimum donation for the event is $25 per person.
Chef Paul, as he was respectfully and affectionately called, was born in Oahu, Hawaii, and received his training at the Culinary Institute of America in Hyde Park, N.Y. He then cooked at Red Sage in Washington and Stromboli Ristorante in his native Hawaii and refined his classical French skills as chef de cuisine and executive chef at Maxime’s in upstate New York. Once in Chicago, he first worked at Ben Pao, then moved on to Kleiner / Davis’ KDK Restaurant Group as Executive Chef of Red Light. Later, Wildermuth opened as Executive Chef of Opera in the South Loop to much critical acclaim, and then opened as Executive Chef of Saiko restaurant in the South Loop. Chef Paul later oversaw as Executive Chef both Marche and Opera restaurants for KDK Restaurant Group. Most recently he was Executive Chef at the Briarwood Country Club in Deerfield, Illinois.
