December Last Month to Dine with Jackie Shen at Red Light
Red Light, Chicago’s venerable West Loop locale for Pan-Asian cuisine, is excited to announce the appointment of Ryan Fowler as its new Executive Chef. Having worked with KDK for 3 years, Fowler is well suited to take the reins of KDK’s West Loop gem.
It is with much admiration and respect that owners Jerry Kleiner and Howard Davis congratulate Jackie Shen on her ten years of outstanding service at Red Light. Shen will be leaving Red Light January 1, 2011 to focus on several special projects and her numerous charitable endeavors for which she has become well known over the years.
For Chicagoans who have loved Chef Shen’s unique Pan-Asian cuisine, December marks the final month that her menu in its entirety will be available at Red Light. After the first of the year, Executive Chef Ryan Fowler’s new menu will be unveiled as he helms the kitchen.
Says KDK co-owner Jerry Kleiner, “After working with the late Paul Wildermuth and the esteemed Jackie Shen at both Opera and Red Light, we feel that Ryan Fowler is the natural choice to succeed Chef Shen at Red Light. We know that Ryan will have no trouble following the footsteps of Paul Wildermuth, Jackie Shen, Michael Kornick, and Arun Sampanthavivat, all of whom have left their mark at Red Light.”
Ryan Fowler, a Philadelphia native raised in Naperville, received his culinary education from Kendall College. During his studies there he interned at the famed Scholar’s Inn in Indianapolis, Indiana before returning to Chicago and working at KDK upon graduation. Like his mentor, the late Paul Wildermuth, Fowler has a passion for elevating traditional Asian dishes using modern cooking techniques. He is excited to put his unique spin on Red Light’s Pan Asian menu with new dishes like Gunthorp Farms Peanut Pork Belly Eggroll, Korean Bulgogi Beef Flatbread, and Deconstructed Mongolian Lamb Rib Stew, and is looking forward to increasing vegetarian and vegan offerings at the restaurant.
Chicagoans can look forward to an updated menu being unveiled in early January but can rest assured that Red Light favorites like Hong Kong Jerry, Chinese 5-Spice Ribs, and Crispy Cat Fish will still be featured on the revamped menu. New menu will be available January 1, 2011 along with an exciting schedule of cooking classes and culinary events at Red Light.
