Prosciutto San Daniele del Friuli, Wines and More this January
WHAT: Quartino is introducing several exciting menu items and specially selected wines from the Italian region of Friuli this January. Friuli is one of the few regions of Italy that can boast a DOC Prosciutto—one whose place of origin is legally defined and controlled—and Quartino is fortunate to feature DOC Prosciutto San Daniele del Friuli this month. As the perfect complement, Quartino is offering several wines of the region including Colle Duga Chardonnay and Friulano and Branko Pinot Grigio, among others, available by the glass or bottle. Friuli is located in the northeast corner of Italy, bordering Slovenia and Austria, the perfect setting for raising the prosciutto’s DOC hogs. Prosciutto San Daniele hogs are aged for a minimum of ten months, often 12 to 13 months. According to EU regulations, such controlled-origin prosciutto may only be produced from fresh cuts of locally produced hogs. The Valpadana hog can reach 200 kilos. Along with its prosciutto, Friuli has a reputation for producing Italy’s best white wines.
Chef John Coletta has created a number of dishes that now feature the imported Prosciutto San Daniele del Friuli including:

- Prosciutto San Daniele with roasted leeks, ricotta and a fried egg ($9.75)
- Prosciutto San Daniele with warm potato pancake, arugula and horseradish ($9.50)

- Prosciutto San Daniele with chestnut risotto ($11.75)
