Koi and Chens Celebrate National Soy Month in April

Koi in Evanston and Chens Chinese and Sushi in Wrigleyville celebrate National Soy Month with an authentic menu of specials featuring soy products prepared in a variety of ways.  Menu items include soy variations like crispy wontons stuffed with edamame and tofu purée; light and fluffy egg tofu with scrambled duck egg and bitter greens; silky soft tofu with peppercorns, garlic and spicy chili bean sauce; and the Asian delicacy tofu skin with bean curd stick, black mushroom and vegetables.  Complete menu details are below.  Available for dine-in, carryout and delivery. 

A member of the legume family, the soybean has been used for over 5,000 years in Asian cooking.  Also a complete protein, soy has become increasingly important in the western diet.  Tofu or bean curd is made by coagulating soymilk and then pressing the resulting curds into soft white blocks.  It is of Chinese origin.
