Texas de Brazil’s seventeen domestic locations are the perfect place to ring in the spring with a bountiful 50-60 item salad bar to complement a traditional Brazilian meal. This spring, Culinary Director Evandro Caregnato has added to the already-plentiful salad bar a refreshing Grape Salad with Gorgonzola Cheese, and offers the recipe to make at home for a sweet and savory addition to any spring meal.
The Grape Salad with Gorgonzola Cheese features several varieties of grapes and creamy Gorgonzola cheese. Says Caregnato, “This salad has light ingredients like the fruits and more robust ones like the crumbled Gorgonzola so it is a balanced salad, perfect for any season not only spring. Guests can enjoy traditional cuts of seasoned beef, lamb, pork, chicken and Brazilian sausage for which Texas de Brazil is famous—all carved tableside in true Brazilian Churrascaria fashion. Diners can complete their Brazilian Steakhouse experience with a decadent dessert, after dinner drink, steaming espresso or hand-rolled cigar.

1 1/2 cup of red grapes seedless
1 1/2 cup of green grapes seedless
1 1/2 cup of mayonnaise
1 tbl spoon of lemon juice
3/4 cup crumbled Gorgonzola cheese
– Combine all ingredients in a large bowl
– Mix well
– Refrigerate before serving
– 1 1/2 cup roasted apples (golden delicious recommended)
